Yummy Drumstick Vegetable Curry (Vegetarian)
Delicious drumstick curry
(Known to cure people suffering from Arthritis.
Also a good tonic. Has anti - bacterial & cleansing properties)
Cooking Time: 15-20 minutes
Servings: 4 Preparation Time: 15-20 minutes
Ingredients:
• Drumsticks: peeled and cut into 2 inch pieces
• Oil: 2 tablespoons
. Ginger + Garlic paste: 1 tbsp
. Cumin + Coriander powder: 1 tsp
. Ginger + Garlic paste: 1 tbsp
. Cumin + Coriander powder: 1 tsp
• Curry leaves: 10 - 12
• Onions: 2
medium - sliced
• Curry powder: 1
teaspoon
. Red chilli powder: 1 tsp
. Turmeric: 1 tsp
. Red chilli powder: 1 tsp
. Turmeric: 1 tsp
• Thin coconut milk: 1/2 cups (Optional)
• Salt to taste
• Green chillies: 4 (Slit)
• Tomato: 1 (finely chopped)
• Fresh coriander leaves,chopped 2 tablespoons
Method:
• Heat oil in a deep pan, add cumin seeds, curry leaves and onions and
sauté till lightly browned.
. Add the tomato and stir
. Add the ginger garlic paste.
• Add the drumsticks and stir.
• Add the curry powder, red chilli powder, turmeric powder & coriander cumin powder and stir again.
• Add thin coconut
milk, salt and green chillies.
• Stir and add half a cup of water.
• Cover and cook till the
drumsticks are well cooked.
• Add fresh coriander leaves and reduce the heat.
• Do not let it come to a boil. Serve hot.
